The ADAN CHOCAN Peruvian coffee from The Naughty Dog roastery is characterised by notes of red apple, plum and rum praline.
This coffee was grown in and around the town of Las Pirias in the northern district of Chirinos, Peru. The town is home to around 30 families who process their harvest together. They grow mainly caturra, bourbon and catimor varieties. In Peru, most coffee is still depulped using hand-cranked equipment.
In the dry method, after picking, the cherries are spread in a thin layer on concrete patios or on African beds to dry. Alternatively, mechanical dryers are used for drying. The coffee must be turned regularly to prevent mould forming and unwanted fermentation. When drying is complete, whether in the sun or in a drying oven, the husk is mechanically removed in what is known as a dry mill.
