Producer Robinson Rivera has been growing coffee for 18 years and has been a member of the ACC group for the last 5 years. His plantation El Silencio, located at an altitude of 1700-1900 meters, occupies 6 hectares fully dedicated to the Castillo variety. ACC Coop, that is Asociación de Caficultores del Centro del Cauca por la Paz, is a non-profit organisation founded in 2016 in the Piendamó area of the Cauca region of Colombia. The association seeks to improve the quality of coffee, from its cultivation to its commercialization, with the belief that such changes will positively impact society in the region. The Coop aims to promote a better life for rural families, environmental protection and peace in the region.
The Honey process leaves some of the mucilage and pulp on the coffee beans when the skins are removed, which increases the amount of sugars absorbed by the bean and affects the flavour of the cup. The amount of remaining mucilage determines the type of honey process - white, yellow, red, or black, depending on its concentration. Properly processed honey coffees gain sweetness and distinct flavors while remaining pure. Raised drying beds (called African drying beds) are preferred for even drying and prevention of mould due to better airflow. However, drying on the terrace requires regular raking of the grains due to direct sunlight. The total drying time depends on these methods as well as the ambient temperature and humidity.
