The Mierisch family, with over 110 years of coffee growing tradition, is one of the oldest producers in Nicaragua and Honduras. Their farm Los Placeres (270 ha, Rainforest Alliance certified) protects nature, planting new trees for shade and to support the fauna. New planting methods improve the ripening of the cherries and the sugar concentration in the grains.

Ethiosar, a hybrid of Sudan Rume and Sarchimore, excels in rust resistance and lively flavour. In the 2021 Los Favoritos auction, it scored over 90 points, confirming its quality. The Christmas lot is unique by grafting onto robusta, which increases the resistance while maintaining the flavour of arabica. A combination of tradition, innovation and care for each bean.

Funky Natural is a special processing method at Los Placeres Farm. After selection, the ripe cherries are soaked in water to remove the unripe fruit and then left to ferment in a thicker layer. During fermentation, they are turned less frequently and kept covered for 36 hours at 38 °C. After a controlled fermentation, they are dried in the sun for 5 daysand for a further 28 days on African beds until they reach 12% moisture. In total, the process takes 33 days.
