What does Roman Nejedlý, roaster from Fiftybeans, say about this coffee?
I am definitely not a fan of conservative "coffee flavors". Therefore, you will always find a somewhat different coffee offer than usual in the Fiftybeans menu. This lot of Castillo , processed by the method of carbonic maceration with the help of fruit infusion, is the wildest I have ever roasted. In fact, it's almost not even coffee anymore. Or is? At his El Placer farm, Sebastian puts the latest knowledge from the world of selective coffee into practice. Fruit infusion , as the fermentation of coffee cherries together with fruit is called, was quite taboo until recently. You will definitely find a lot of opinions on this processing method that reject it. I can only tell you this: It's probably the best coffee I've ever had!
I won't tell you that thanks to fermentation together with strawberries and cranberries, this coffee tastes like strawberries, fruit candies, or that it is strikingly reminiscent of the legendary Tubble gum . That it is juicy, sweet, has a fantastic aftertaste... You won't believe me anyway. YOU MUST TRY THIS COFFEE!
Wonderbeans - Wonder, or a miracle. This describes the flavors and aromas of these coffees. The goal of this project is to find the best coffees from around the world and offer them to you, our fantastic customers. Coffee has become an integral part of gastronomy and I pay tribute to it with this project.
To roast this coffee, I use a Loring S15 Falcon roaster, which uses convection, i.e. hot air, as the main source of thermal energy propagation. It allows me to work very precisely with the taste nuances of this coffee and thus I can maintain a high level of juiciness, but also sweetness. To prepare filtered coffee, always use the beans at least 7 days after the roasting date. After the 1st opening, let the package "air out" for at least 4 hours before you start making coffee. You will avoid those unwanted bitter notes in the taste.
The package is infused with food-grade nitrogen to slow down the oxidation of the beans, so the coffee retains its character ipo 45 days from roasting.
