Raúl and his siblings are sixth generation farmers who have been growing coffee continuously since 1892. Their coffee is exceptional because of their organic approach, which includes local flora and pollination of coffee trees by endemic bees. Family beekeeping plays a vital role in maintaining the natural balance and adds a unique flavour to the coffee.
The farm is situated in a mountain microclimate where the fog from the Gulf of Mexico naturally irrigates the coffee trees. Sustainable methods, such as drying on African beds and organic wet processing with low water consumption, emphasize environmental protection and the highest quality coffee. Raúl's family has not used fossil fuels for 30 years, including drying the coffee, which is done entirely with solar energy or steam from fallen branches.
The 64 HRS process begins with the harvesting of coffee cherries at an early stage of ripeness. After a thorough inspection, the cherries are stored for 64 hours in anaerobic tanks where flotation takes place. Only the top skin is then removed. Once the farmers have verified that the cherries have reached optimum fermentation, slow drying on African beds begins on terraces and can take several days until ideal humidity is reached.
