Milk temperature matters

Because controlling the temperature of the whipped milk is really important. The experts know that milk should be heated to 60-65 °C. At 45 °C, the foam is already relatively stable (the dissolution of milk fat plays a role here), but it is only at 65 °C that the foam will be maximally stable (when using whole milk).
Basic rules for proper (manual) frothing:

Heat the milk to an optimum temperature of 60-65 °C.

By pressing the plunger again, the milk will thicken and form a velvety foam.

If you let the finished froth sit for a minute before pouring it over your coffee, you will increase its stability and the result will be all the better.
What if you don't follow the rules?
If you don't heat the milk to a sufficient temperature, the foam will "fall off".
On the other hand, milk that is too warm will lose its original density, thin the foam and adversely affect the taste of the coffee.
