Criollo is an original and rare cocoa variety known for its unique aroma, although it has a low yield. In Peru, there are only a few farmers who are dedicated to its cultivation precisely because of the small yield. Our Criollo cocoa beans come from small growers in the area near Pucallpa, where this variety thrives exceptionally well. Beans are harvested on a small plantation and processed with an emphasis on quality.

The Criolla tree produces fewer fruits, but they are among the best in the world . The seeds have a characteristic shape – they are round , slightly flattened , and before fermentation they are characterized by a light purple to white tinge. This cocoa is known for its fruity aroma, subtle notes of nuts and a slight bitterness that is refined and balanced. Thanks to its properties, it is used for the production of top chocolates and gourmet delicacies.

Our favorite recipe for intense, even ceremonial cocoa: Heat 1 liter of water to boil, add 45-50 g of cocoa mass, 2 cloves, a pinch of 100% cinnamon and sugar or honey to taste. Cook on low heat for approximately 10 minutes and enjoy the rich taste.

Notice:

  • Store in a cool, dry and dark place.
  • The paste is not free of cocoa butter , so please don't be afraid of "greasy eyes" on the drink.
  • Fat is drawn on the surface of the table , a change in color is not a problem. When preparing cocoa, the fat dissolves and a consistent drink is created.
  • It is not enough to pour hot water over the cocoa, it has to be boiled for a while.
